Shojin thick rolled sushi

Ingredients

laver, kanpyo, chopped shiitake mushrooms, Koyadofu (freeze dried tofu), fresh yuba, cucumber, mitsuba, vinegar, sugar, salt, dashi stock

Recipe

  1. Boil rice slightly harder. Add vinegar, sugar, salt and dashi stock to the rice..
  2. Cook kanpyo, shiitake mushrooms, koyadofu and yuba in slightly sweet seasoned.
  3. Boil mitsuba and drain it.
  4. Cut cucumber to even length.
  5. Spread the rice thinly on the laver.
  6. Align vegetables on the rice and roll them up.
  7. Cut in slices and serve.
